2016 Small-Lot Sparkling Riesling
Nova Scotia’s cool-climate and unique ocean-influenced terroir provide the ideal conditions for exceptional traditional method sparklings and distinctive aromatic whites, such as Riesling. This small-lot, experimental wine celebrates our region’s natural strengths by combining those two signature styles in one: a traditional method sparkling Riesling. All grapes were sourced from our organic and biodynamic estate vineyard. Grapes were crushed, destemmed, and macerated on their skins for two hours to extract primary fruit flavours. Primary fermentation was in stainless steel, followed by lees aging in bottle of 14 months. Disgorged February 25th 2019.

Fragrant notes of honeyed citrus, white flowers and flint with gentle, well-integrated bubbles. Highlights of honey and ripe stone fruit flavours on the palate, which is vibrant and well-balanced.
