A partial carbonic maceration helped amplify fruitiness. Pre-bottle aging was kept short and in stainless steel in keeping with the fresh, fruit-forward style. A full malolactic fermentation helped soften acidity a bit, leaving a bright yet smooth finish.
Deep ruby red in the glass. The nose is jammy with ripe cherry, blackberry, crushed violet, and hints of herbal undertones. Light-bodied with juicy, bright berry fruit and a smooth, velvety finish.
Pairs well with charcuterie, especially patés & terrines, and various light fare dishes from fish and chicken to salads.
Serving Temperature: Best served slightly chilled (16–18°C)
