Primary fermentation and a partial malolactic fermentation took place in old/neutral French oak barriques, which helped provide texture and complexity. Aged five years on lees. Disgorged January 2018.
Brut Nature / Zero dosage - left completely dry to showcase a pure expression of the Lightfoot Home Farm terroir.
Pale gold with very fine bubbles in the glass. McIntosh apple, salty ocean air and hints of toasted brioche on the nose. Pure, precise and well structured by a backbone of classic Nova Scotian acidity. The delicate mousse adds finesse and leads the way to a persistent finish with impressive length.

Recommended Drinking: The structure and profile of this wine suggest it could be cellared for 10+ years, only gaining in complexity and depth over time.
