2019 Bubbly Rosé
A fruit-driven sparkling rosé with signature Nova Scotian freshness and fragrant floral aromatics. Secondary fermentation via Charmat Method provided a delicate and persistent bubble. Given the desired style, lees contact time was kept short to preserve freshness and purity of fruit character.
A rare late spring frost following bud break in the spring of 2018 decimated tender vine growth, devastating grape yields across Nova Scotia. Due to the residual impact of this event on cropping levels, this blend was supplemented (40%) with grapes sourced from our industry colleagues in the Niagara region of Ontario, sourced from growers who share the same philosophies for ultra premium quality, sustainable winegrowing practices. The Nova Scotia grown components were lower yielding as a result of the frost, enhancing the aromatic intensity and ultimately providing the resultant blend with its signature Nova Scotia aromatic.

Fragrant and expressive with notes of cherry preserves, pear and pomegranate reduction with floral undertones reminiscent of peony and rose. The red fruit notes carry over to the palate with fine, lively bubbles, bright acidity providing freshness and persistent length.
This wine works well as a versatile aperitif and is ideal for summer patio sipping or paired with light lunch fare. Suggested pairings include maki sushi, lactic cheeses, salty/cured meats, saffron risotto and fruit-based desserts.
