2018 Brut Rosé
Nova Scotia’s cool-climate and coastal-influenced growing environment provides the ideal conditions for sparkling wines characterized by a distinctive freshness, vibrancy, and brilliance of flavour. The 2018 Brut Rosé is an exciting new wine to join the Lightfoot & Wolfville traditional method sparkling portfolio, with an inaugural release set for the spring of 2020.
Pinot Noir grapes of ideal ripeness were hand-harvested along the shores of the Minas Basin. On the crush pad, hand-sorting was followed by whole-cluster pressing with a 3-hour maceration on the skins. Aging en tirage was eleven months, prior to disgorgement in early March 2020.

A lovely pale salmon hue in the glass. Delicate red berry and doughy biscuit notes on the nose. A fine, yet creamy mousse is balanced by a backbone of refreshing acidity, leading to a beautifully textured, dry finish.
Pairing suggestions include coldwater shellfish such as baby shrimp or seared scallop with parsnip purée or fresh strawberries with whipped cream.
