This is an ultra small-lot, single-vineyard Sauvignon Blanc from just 1 acre of our organic-biodynamic estate vineyard in Avonport, N.S. The grapes were handpicked, and hand sorted to yield the highest quality juice. Sorted clusters were crushed and destemmed and cold soaked for up to 24 hrs to enhance flavor extraction from the skins.

°Brix at Harvest: 21.2

Fermentation took place in old French oak and aged in barrel, on lees, for 6 months.  

Tasting Notes

Pale straw in color with zesty lime, lemongrass, and pink grapefruit on the nose. Well-structured, with white-pepper notes mid-palate, balanced by flavours of Asian pear, gravel, and mouthwatering acidity providing impressive length. Drinking beautifully now, this wine will reward those with the patience to cellar it over the next 5+ years.  

Suggested pairings include risotto with basil, shrimp with lemon, crab salad, roast chicken with sage, soft cheeses such as goat cheese, and white fish dishes accented by fresh herbs.
