2017 Bubbly White
Nova Scotia’s cool, ocean-influenced terroir provides the ideal conditions for expressive aromatic whites and lively sparkling wines. Our Bubbly White captures the essence of both these signature styles as a fresh, fragrant, Germanic-inspired aromatic sparkling blend.
The generous 2017 growing season provided low disease pressure, superb aromatic intensity and fruit concentration. Each variety making up this blend was handpicked and fermented separately in stainless steel. A base wine blend was created and transferred to pressure tank for secondary fermentation via the Charmat Method, providing a delicate and persistent bubble. Given the desired aromatic style, lees contact time was kept short to preserve freshness and purity of primary fruit flavor.

A lively and expressive aromatic sparkling with fresh pear, peach blossom, hints of green apple and orange zest. The fresh-fruit and floral character carries through to the palate with a delicate sweetness that is well-balanced by crisp, vibrant acidity and freshness.
Serve as an aperitif or pair with a wide range of fine cheeses, Asian-inspired dishes, shellfish, chicken, or pork or their own or with cream sauces. Also delightful at the end of a meal with fresh fruit.
